These protein-packed, gluten-free bites are perfect for meal prep, breakfast on the go, or a savory snack. Customize with your favorite fillings!
Ingredients:
8 large eggs
1 cup cottage cheese (2% milkfat)
½ cup shredded cheese (e.g., cheddar or mozzarella)
Add-ins of choice (spinach, onion, ham etc.)
Instructions:
1. Blend Base : Add eggs and cottage cheese to a food processor. Blend until smooth and creamy.
2. Add Fillings: Stir in chopped spinach and shredded cheese (or other toppings of choice).
3. Bake: Preheat oven to 350°F (175°C). Pour mixture evenly into a greased 12-cup muffin tin. Bake for 12–16 minutes, or until centers are firm and set.
4. Cool & Serve: Let cool slightly before removing from pan.
